Entry 8: Dhokla by Sushma Pinjala


Ingredients:

Gram flour(besan) 2 cups

Water 1 cup

Sooji 1/4 cup

Plain yogurt( should be a little sour) 1/2 cup

Soda bicarb soda 1 tsp

Sugar 1 tsp

Turmeric powder or yellow food coloring ½ tsp

Salt to taste

Oil 1/4 cup

Mustard seeds 1sp

Hing(Asatafitido) 1/4 sp

Cilantro 3sps

Green chillies 4

Method:

Mix all the dry Ingredients first i.e., Besan, soda, sooji, salt, termeric, and sugar.

Now take warm water and oil and mix that in yogurt.

Now add this slowly in to besan and mix throughly so that no lumps r formed.

Take a steel flat bowl and grease the bowl with oil and transfer the mixed besan into it.

Hear water in rice cooker or idly cooker where in ur steel bowl can be fitted and place this bowl init and cook it for atleast 20 to 25 mits.

Remove from stove and transfer it to serving plate.

Now Make a tempering. Heat oil add mustard seeds and green chillies cut into length wise. Now add hing and add this on the top of the steamed Dhokla.

Garnish with chopped cilantro. Cut into pieces and serve.

This is a gujarathi dish. Have learnt it when i was in Mumbai.
