Entry 9: Healthy Pakora by Suchitra P


Ingredients:

1 carrot- grated

½ red onion- chopped length wise

½ cup chopped spring onions

½ bunch coriander- chopped

1 Red chilli –finely chopped

½ tsp mustard seeds

For batter:

50g- maida

50g- besan

1 tbspn cumin powder

1 ½ tbspn chilli powder

Salt

Turmeric

Procedure:

-Mix grated carrot, onions, spring onions, coriander, mustard seeds

-prepare semi thick batter by mixing besan, maida, cuminpwdr, chillipowder,salt, turmeric and little water .

-Mix one portion of vegetables with batter and layer it on hot pan with little oil, thin layer gives u more crispness to dish, cook till both sides turns to nice brown and crispy.

-transfer to chopping board and cut them to wedges shape and serve it hot.

Benefits: yummy pakora with lots of vegetables[carrot, spring onion, coriander] sources of lots of vitamins and fiber cooked with less oil.
