Entry 17: Yummy Chilli Corn Toast by Shubha Ravikoti


Recipe makes 20 corn toasts:)

Ingredients:

Whole Wheat bread / Multi-Grain bread - 10 slices

Red Onion - 1/2 cup

Butter

Pam spray / any grease.

Green chillies - 2 tsp

Corn kernels - cooked 1/2 cup

Tomatoes - 1/4 cup

Potato - 1 boiled and chopped (optional)

Bell pepper - 1 finely chopped (Optional)

Salt & pepper

Lemon juice - 1 tsp

Chaat masala - 1 tsp

Shredded parmesan chese - 2 tbsp

Chopped fresh Coriander leaves for garnish

Method :

Cut the bread slices in 2 pieces each. Now u end up with 20 pieces of bread. Keep it aside.

Now in a big bowl add the chopped vegetables. Add in the salt, pepper, chaat masala, Lemon juice and mix well. Finally add the grated cheese, coriander leaves and mix well.

Grease the cookie tray with pam. Preheat the oven to 300 degree F.

Butter the bread pieces and arrange it on the cookie tray or baking sheet. Spread the veggie mix on top of these bread pieces. See that u spread the veggies evenly...:)

Place the trays in the oven and bake them for 10-15 minutes. the time differs from oven to oven so its kind of trial and error...:) See that u dont burn the bottom of the bread. Once the cheese melt a bit and the top is lightly brown, take out and serve hot...:) This is a very very easy evening snack...:) and an all ime favourite. Hope u enjoy it as much as we do..:D

Serve hot with tomato ketchup.

TIP : U can even cover the filling with another slice of bread, grill it in a sandwich maker and make it into ur kiddie's lunch box favourite...:D Creativity has no limit so try hiting ur creative limit...:D

Well I dunno the calories this recipes packs into it... but I can say that its much better than the greasy grill chese sandwich and tastes so good tooo :D Well as we r using whole wheat or multigrain bread it is very healthy for u. Its ur daily dose of whole grains :)

We r using so many veggies in this recipe so its really healthy...:) and a good way to have ur daily dose of veggies. I like to have these veggies raw... and hence most of the recipes that I make I try to use lotsa veggies...:) Enjoy this yummy yet nutritional treat...:D
